Ingredients
- High-quality dark chocolate (70%)150 g
- Eggs, separated3 large
- Sugar3 tbsp
- Heavy cream0.75 cup
- Vanilla extract0.5 tsp
Instructions
- Melt the dark chocolate over a double boiler or in the microwave and let it cool slightly.
- In a bowl, whisk the egg yolks with the sugar until pale and fluffy. Stir in the cooled melted chocolate.
- In a separate, clean bowl, whip the heavy cream to soft peaks.
- In another clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the whipped cream into the chocolate-yolk mixture.
- Then, carefully fold the beaten egg whites into the chocolate cream mixture in two batches until just combined.
- Spoon the mousse into serving glasses and refrigerate for at least 4 hours to set.
- Garnish with chocolate shavings.
