Ingredients

  • High-quality dark chocolate (70%)150 g
  • Eggs, separated3 large
  • Sugar3 tbsp
  • Heavy cream0.75 cup
  • Vanilla extract0.5 tsp

Instructions

  1. Melt the dark chocolate over a double boiler or in the microwave and let it cool slightly.
  2. In a bowl, whisk the egg yolks with the sugar until pale and fluffy. Stir in the cooled melted chocolate.
  3. In a separate, clean bowl, whip the heavy cream to soft peaks.
  4. In another clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the whipped cream into the chocolate-yolk mixture.
  6. Then, carefully fold the beaten egg whites into the chocolate cream mixture in two batches until just combined.
  7. Spoon the mousse into serving glasses and refrigerate for at least 4 hours to set.
  8. Garnish with chocolate shavings.
