Chocolate Filled Dessert Cups with Raspberry Topping

Ingredients
- Dark chocolate200 g
- Heavy cream1 cup
- Fresh raspberries1 cup
- Sugar2 tbsp
- Balloons6 small
Instructions
- Melt 100g of dark chocolate. Inflate small balloons and dip the bottom of each into the melted chocolate to create a cup shape. Place on parchment paper and refrigerate to set.
- For the mousse, melt the remaining 100g of chocolate. Whip the heavy cream to stiff peaks. Fold the melted (and cooled) chocolate into the whipped cream.
- For the sauce, mash the raspberries with sugar.
- Carefully pop and remove the balloons from the set chocolate cups.
- Fill each chocolate cup with the mousse.
- Top with the raspberry sauce just before serving.
