Ingredients

  • Dark chocolate200 g
  • Heavy cream1 cup
  • Fresh raspberries1 cup
  • Sugar2 tbsp
  • Balloons6 small

Instructions

  1. Melt 100g of dark chocolate. Inflate small balloons and dip the bottom of each into the melted chocolate to create a cup shape. Place on parchment paper and refrigerate to set.
  2. For the mousse, melt the remaining 100g of chocolate. Whip the heavy cream to stiff peaks. Fold the melted (and cooled) chocolate into the whipped cream.
  3. For the sauce, mash the raspberries with sugar.
  4. Carefully pop and remove the balloons from the set chocolate cups.
  5. Fill each chocolate cup with the mousse.
  6. Top with the raspberry sauce just before serving.
