Ingredients

  • Heavy cream2 cups
  • Sugar0.5 cup
  • Orange1 large
  • Gelatin powder2 tsp

Instructions

  1. Use a kitchen torch or the broiler to char the peel of the orange all over until blackened.
  2. Let it cool, then slice the orange in half. Zest the peel and juice the orange.
  3. In a saucepan, heat the heavy cream, sugar, and the burnt orange zest until simmering. Let it infuse for 15 minutes off the heat.
  4. Bloom the gelatin in 3 tablespoons of the orange juice.
  5. Strain the cream mixture to remove the zest.
  6. Stir the bloomed gelatin into the warm cream until fully dissolved.
  7. Pour into ramekins or glasses and refrigerate for at least 4 hours to set.
  8. Serve chilled.
