- Heavy cream2 cups

- Orange1 large
- Gelatin powder2 tsp
Instructions
- Use a kitchen torch or the broiler to char the peel of the orange all over until blackened.
- Let it cool, then slice the orange in half. Zest the peel and juice the orange.
- In a saucepan, heat the heavy cream, sugar, and the burnt orange zest until simmering. Let it infuse for 15 minutes off the heat.
- Bloom the gelatin in 3 tablespoons of the orange juice.
- Strain the cream mixture to remove the zest.
- Stir the bloomed gelatin into the warm cream until fully dissolved.
- Pour into ramekins or glasses and refrigerate for at least 4 hours to set.
- Serve chilled.
