Ingredients

  • Black glutinous rice1 cup
  • Water4 cups
  • Palm sugar (gula melaka)100 g
  • Pandan leaves2 leaves
  • Coconut milk for serving1 cup
  • Salt0.25 tsp

Instructions

  1. Rinse the black rice and soak it in water for at least 2 hours.
  2. Drain the rice and place it in a pot with 4 cups of fresh water and the pandan leaves.
  3. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the rice is tender and the mixture has thickened.
  4. Stir in the palm sugar until it completely dissolves.
  5. To make the coconut sauce, gently heat the coconut milk with a pinch of salt until warm (do not boil).
  6. Serve the warm black rice pudding in bowls with a generous drizzle of the warm coconut sauce.
