Ingredients
- Black glutinous rice1 cup
- Water4 cups
- Palm sugar (gula melaka)100 g
- Pandan leaves2 leaves
- Coconut milk for serving1 cup
- Salt0.25 tsp
Instructions
- Rinse the black rice and soak it in water for at least 2 hours.
- Drain the rice and place it in a pot with 4 cups of fresh water and the pandan leaves.
- Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the rice is tender and the mixture has thickened.
- Stir in the palm sugar until it completely dissolves.
- To make the coconut sauce, gently heat the coconut milk with a pinch of salt until warm (do not boil).
- Serve the warm black rice pudding in bowls with a generous drizzle of the warm coconut sauce.
