- Molasses0.5 cup
- Strong brewed coffee, cooled0.5 cup
- Mascarpone cheese1 cup
- Heavy cream0.5 cup
- Powdered sugar0.5 cup
- Cocoa powder for dusting1 tbsp
Instructions
- Bake gingerbread cupcakes using your favorite recipe with flour, spices, and molasses. Let them cool completely.
- Once cool, core the center of each cupcake.
- Spoon a little of the cooled strong coffee into the cored center of each cupcake.
- To make the frosting, beat mascarpone cheese, heavy cream, and powdered sugar until light and fluffy.
- Pipe the frosting onto the cupcakes.
- Just before serving, dust the tops with cocoa powder.
