Ingredients
- Fresh strawberries2 cups
- Sugar1 cup
- Egg whites3 large
- Heavy whipping cream1.5 cups
- Lemon juice1 tbsp
Instructions
- Prepare 4-6 ramekins by wrapping a collar of parchment paper around the top, extending 2 inches above the rim.
- Puree the strawberries with lemon juice and half the sugar until smooth.
- In a clean bowl, whip the heavy cream to stiff peaks and refrigerate.
- In another bowl, beat the egg whites until foamy. Gradually add the remaining sugar and beat until you have a stiff, glossy meringue.
- Gently fold the strawberry puree into the meringue.
- Finally, fold the whipped cream into the strawberry-meringue mixture.
- Spoon the mixture into the prepared ramekins, filling them up to the top of the paper collar.
- Freeze for at least 6 hours or overnight.
- Remove the parchment collars just before serving.
