Ingredients

  • Fresh strawberries2 cups
  • Sugar1 cup
  • Egg whites3 large
  • Heavy whipping cream1.5 cups
  • Lemon juice1 tbsp

Instructions

  1. Prepare 4-6 ramekins by wrapping a collar of parchment paper around the top, extending 2 inches above the rim.
  2. Puree the strawberries with lemon juice and half the sugar until smooth.
  3. In a clean bowl, whip the heavy cream to stiff peaks and refrigerate.
  4. In another bowl, beat the egg whites until foamy. Gradually add the remaining sugar and beat until you have a stiff, glossy meringue.
  5. Gently fold the strawberry puree into the meringue.
  6. Finally, fold the whipped cream into the strawberry-meringue mixture.
  7. Spoon the mixture into the prepared ramekins, filling them up to the top of the paper collar.
  8. Freeze for at least 6 hours or overnight.
  9. Remove the parchment collars just before serving.
